Each follows one consistent recipe: one part past, one part present, and one part revolutionary technique. For example, the Pineapple Old Fashioned will be served on a bed of haw to add another layer of aroma to the drink. Further in the menu, the Gin & Tonic has been reinvented. Both the gin and the tonic will be carbonated for the best distribution of gin aroma throughout the whole drink.

The completely exposed theater kitchen is the heart of Jansz.; figuratively and literally. The dining space encircles the kitchen, inviting guests to have a taste of the buzzing atmosphere. The name was inspired by 17th- Century Dutch merchant Volkert Jansz,a former inhabitant of the building.
